Carrots, Cabbages, Corn and Celery can provide great flavor and nutritional value in stocks and soups and are generally able to withstand tougher growing conditions. Normally these items are the value of the department with a lower cost per pound than most other vegetables. Use heavily in cooking but also can be eaten raw, with dip or in salads, they are a great value in the produce aisle.
